A refreshing, slightly sweet alternative to the traditional version.
1 C boiling water
3/4 C bulgur
1-1/2 C fresh mint leaves, finely minced
1/3 C olive oil
3 T lime juice
1 C diced honeydew melon
1/2 minced red onion
1/2 t salt
In a bowl with a cover, pour water over bulgur. cover tightly and let stand for 30 minutes. Drain excess water.
Toss with remaining ingredients and serve.
