I ate some of these crispy, gluten-free cookies at a party last week, and Carol said she got the recipe from Pam. Then Pam said she got it from someone else, who got it from someone else. Anyway, it’s so simple, if you take them to a party, you can quote the recipe off the top of your head. And gluten-free as well!
1 C peanut butter (Jif or anything cheap is fine)
1 C sugar
1 t baking soda
Form 1-inch balls and put them on a cookie sheet. Pierce them with a fork 2 or 3 times. Pam said she also presses them flat. Carol said she doesn’t. This led to a discussion as to whether peanut butter cookies must have criss-cross marks on the top. Agreement was not reached.
Bake at 325 to 350, depending on whether you have a very hot or slightly cool oven, for 10 to 15 minutes.
