Step one: Sponge
6 cups lukewarm water
1 1/2 cups powdered milk
3/4 cup sugar/honey/molasses
1/2 cup soy grits or chopped garbanzo beans
(optional) (bran flakes, wheat germ, oat germ, cracked wheat)
4 cups whole wheat flour
(1/3 cup) (gluten flour if weather is changeable)
flour added to get a pancake batter like texture
2-3 tbsp yeast
Let rise until bubbly, then stir down, and let rise again.

Step two:
Stir down the sponge and add:
2 tbsp salt Note: These may be placed on top of sponge after first stirring down…
3/4 cups oil
Knead into flour and put in greased pans to rise in a warm place

Step three:
When the bread has risen about 1/2″ above the tops of the pans, bake in a pre-heated oven at 350 for one hour (check at 50 minutes)

Makes four 2 1/4 pound loafs of bread.
