Brazilian Fish in Coconut Milk

4 white fish steaks, about 9 oz each
Juice of 2 limes
2 garlic cloves, minced
Handful of fresh cilantro, chopped
1 onion, diced
2 green bell peppers, seeded and diced
2 tomatoes, diced
2/3 C coconut milk
2 T tomato paste
1 T olive oil

In a bowl, marinate the fish in the lime juice, garlic, cilantro, and salt for at least a half hour.

Transfer everything to a large pan, arranging them in one layer. Cover with onion, green pepper, and tomatoes. Mix the coconut milk with the tomato paste and pour over everything. Sprinkle the olive oil over the top. Let sit fo
