Bret’s Chocolate Chip Cookies

Oven 375. Makes about 100.

2 cups butter or margarine or Crisco
1 1/2 cups sugar
2 cups (packed) brown sugar
4 eggs
1 tsp. vanilla extract
1 tsp. orange extract
grated rind of one orange
4 cups flour (I use unbleached)
4 1/3 cups ground oatmeal (5 cups before grinding in blender)
2 tsp. baking powder
2 tsp. baking soda
1/2 tsp. salt
20-24 oz. chocolate chips
one or two handfuls coconut

(optional)

In a big bowl, cream (or soften in the microwave) butter. Add the sugars
and
whip with a whisk. Add the eggs, extracts, and orange rind, and beat well.

Mix together the dry ingredients. Add them to the sugar mixture and mix
well.
Fold in the chocolate chips and coconut. Drop by spoonfuls onto ungreased
cookie sheets and bake for 10 minutes.
