Buckwheat Fritters in Yogurt Sauce

1/3 C sifted buckwheat flour
1/4 t salt
1/4 t sugar
1/3 C water
1/4 t baking powder
Oil for frying the fritters
1-3/4 C plain yogurt
1/2 t salt
1/4 t black pepper
1/4 t lime zest
1/2 t lime juice

Combine buckwheat flour, salt, and sugar in a small bowl. Add water and beat until smooth. Cover the bowl and allow to sit for 1/2 hour. Stir, add the baking powder, and add more flour or water to achieve a thin, cake-like batter.

Fry 1-teaspoon-sized fritters in the hot oil until puffed and reddish-brown. Drain on paper towels.

Whisk the yogurt, salt, pepper, lime zest, and lime juice together. Add the buckwheat puffs and mix gently before serving.
