Cantaloupe and Cucumber Salad

1 cucumber, seeded, peeled and sliced very thin
1/2 cantaloupe, seeded, peeled, and sliced very thin
2 T fish sauce
2 T lime juice
1 jalapeno, seeded and diced (or substitute Sriracha to taste)
1 t minced fresh ginger
1/4 C fresh mint, chopped

Toss ingredients together and allow flavors to blend. Serve with grilled chicken or fish, or alongside stir-fried beef.
