Carmelized Carrots

This is so simple, it’s hardly a recipe. It’s the most wonderful thing that has ever happened to a carrot.

Julienne or slice 4 large carrots. In a large skillet, heat a tablespoon of sesame oil over high heat. Saute the carrots for about a minute, then turn the heat to medium-low and continue sauteeing them for as long as you have patience. You can cook them for 10 minutes, or 30. The longer you cook them over medium-low heat, the sweeter they get. Season to taste with salt.
