Carmelized Onion Veggie Burgers

Makes 4 burgers.

1 large onion, chopped coarsely
5 oz sliced mushrooms
2 T garlic, minced
Salt and pepper
2 T maple syrup
2 T balsamic vinegar
1 C rice flour
2 T cornstarch
1/4 C pine nuts
2 T chopped parsley
1/2 t Liquid Smoke

Heat a couple of tablespoons of oil over medium-high heat and saute the mushrooms and onions with a large pinch of salt for about 5 minutes. Stir in the maple syrup and vinegar, lower the heat to medium, and cook for about 10 more minutes, stirring occasionally. When most of the liquid from the mushrooms has been absorbed, stir in the garlic and season with black pepper.

In a large bowl, combine the sauteed mixture with the rice flour, cornstarch, pine nuts, parsley, and liquid smoke. Knead well and form into patties.

You can pan-fry these for 3 minutes on a side, bake them on a nonstick mat at 350 F for 15 minutes on a side, or grill them.
