Chickpea Flour Goodies

3/4 C buter
2 C chickpea flour
2 T coconut
2 T chopped walnuts
1/4 t nutmeg
3/4 C brown sugar, packed

Melt the butter in a heavy saucepan over medium heat. Add the chickpea flour, coconut, walnuts, and nutmeg and cook, stirring, for 5 minutes. Add the sugar and continue to cook and stir until it’s thick and brown, 10 to 15 minutes more.

Spread on a silicone mat or a countertop and let cool. You can form it into balls when it’s partially cooled or wait until it’s totally cool and cut it into squares.
