Chinese Radish Salad

1 1/2 cups red radishes
1 t. salt
1 cup ice water
1 T. soy sauce
1 t. sugar
1 t. sesame oil
1 t. vinegar

Wash radishes and trim ends. Make cuts 1/16 of an inch apart to about 3/4 through the radish. Rub with salt and place in ice water. Chill 15 minutes or more. Drain and spread radishes apart to make “fans”. Combine the remaining ingredients and pour over radishes. Stir gently. Makes about 6 servings.
