Chris’ Spinach Lasagna “Surprize”

This is a recipe card from my brother Stevie’s collection. I do not exactly understand what the items in parentheses mean though — they are not referenced in the instructions, so maybe they’re just optional?

10 oz pkg frozen chopped spinach
2 C cottage cheese (or 15 oz ricotta)
2 C shredded mozzarella cheese, divided
(layer tomatoes)
1 egg
3/4 T oregano
1/8 t pepper
32 oz jar spaghetti sauce
8 oz lasagna noodles, uncooked

Thaw and drain spinach.
In a large bowl, mix cottage cheese, 1 C mozzarella, spinach, egg, oregano, and pepper.
In greased 9 x 13 pan, layer 1/2 C sauce, 1/3 of noodles, 1/2 of cheese-spinach mixture. Repeat; top with remaining noodles, then remaining sauce; sprinkle with remaining cup of cheese.
Pour water around edges.
Cover tightly with foil;
Bake 350 for 1 hour 15 min. Let stand 15 min before serving.
Serves 10.
