Cilantro rice

1-1/2 C long-grain white rice
2 C water
1-1/2 t kosher salt
1 C cilantro leaves
1/2 C white onion, diced
1/4 C chopped scallions
1-1/2 T chopped jalapeno, including seeds
1-1/2 T fresh lime juice
1 t olive oil
Bring rice, water, and 1 t salt to a boil in a medium saucepan. Reduce heat to low, cover, and simmer for 20 minutes. Remove from heat and let stand, covered, for 5 minutes. Fluff.
Meanwhile, puree remaining ingredients (including 1/2 t salt) in a blender, if necessary adding 1-2 T water. Add puree to rice and stir to combine.
