Crispy baked chicken

Tastes like fried chicken!
1/4 C mayonnaise (can use reduced-calorie)
1 t Dijon mustard
2 t grated lemon zest
1/2 t salt
4 drops hot pepper sauce
1 3- to 4-lb chicken, cut in eights, skin removed
3/4 C cornflake crumbs
Preheat oven to 375 F. Spray a large, shallow baking pan with cooking spray.
Stir together the mayo, mustard, zest, salt, pepper, and hot sauce in a large bowl. Toss the chicken in this mixture to coat it.
Place the crumbs in a large zip-top bag. Add the chicken, one piece at a time, and shake it until the piece is coated.
Place the chicken in the baking pan. Spray the top with cooking spray. Bake until golden brown and cooked through (do not turn it), about 45 minutes.

Serves 6, about 250 calories per serving.
