Easy chocolate-chip cookies

These simple cookies are made with oil instead of butter, and they come out soft and chewy.

2-1/2 C flour
1 t baking soda
1/2 t salt
1 C brown sugar, packed
1/2 C white sugar
2 eggs
1 C vegetable oil
1 t vanilla
1 C chocolate chips

Preheat the oven to 350 F. In a large bowl, combine the first 5 ingredients. In a small bowl, beat the eggs, then stir in the vegetable oil and the vanilla. Mix the liquid ingredients into the dry ingredients, then add the chocolate chips.

Drop by spoonfuls onto ungreased cookie sheets. Bake for 8 to 10 minutes. Allow each sheet of cookies to cool for about 5 minutes before transferring the cookies to a wire rack to cool completely.
