6-8 hard green bananas
3 T oil or butter
1/2 t salt
1/4 t pepper
1 medium onion, diced
Use a sharp knife to peel the green skin from the bananas. Slice them into 1/4-inch rounds. Heat butter in a heavy skillet and add the bananas, onions, and salt and pepper. Stir together, then cover and cook, stirring occasionally, for about ten minutes.
