A fine finger food when served with toothpicks…also a great side dish.
50 button mushrooms
1/2 C butter
2 T extra-virgin olive oil
1 T diced onion
8 cloves garlic, minced
Handful parsley, minced
Clean and trim the ‘shrooms. Melt the butter and oil together in a large skillet. Saute the onion and garlic for 2 minutes. Add the ‘shrooms and cook, stirring occasionally, for about 5 minutes. Serve sprinkled with parsley.
