Gluten-free apple tarts

Crust
1/2 C almond meal
1/2 t cinnamon
1/2 C brown rice flour
2 T agave syrup
2 T applesauce
1/4 C ice-cold water

Preheat oven to 375 F and spray a 12-cup muffin pan with cooking spray (or grease the muffin cups).

In a medium bowl, stir the almond meal, cinnamon, and rice flour together. Add the liquid ingredients and mix to create a crumbly dough. Press the dough into the muffin cups and up the sides.

Tart filling
1 C apple, finely diced (with or without the skin)
2 T applesauce
1 t vanilla
1 t agave syrup or maple syrup
1/4 t cinnamon

Stir the filling ingredients together in another bowl. Divide the filling among the muffin pans, pressing it down.

Bake for 15 to 18 minutes. Remove from heat and cool for 5 minutes, then carefully remove them to a wire rack to finish cooling.

Serve warm or cool.

Makes 12 tarts. If you use natural applesauce, without sugar, each of these tarts only has 65 calories.
