1 lb 2 oz flour
2 tsp yeast
1 t salt
2 t cinnamon
oil for frying
Syrup: 2 C honey, 1 C sugar, stick of cinnamon, 2 C water
Dissolve yeast in lukewarm water. Put flour and salt in a bowl and gradually mix in yeast. Add gradually some more lukewarm water until you have a paste, not too thick or thin. Cover and let stand in warm place (or in a bowl of warm water) until doubled.
Drop by teaspoons into hot oil, allow to turn golden. Remove with slotted spoon.
Syrup: Boil all ingredients 10 minutes. Pour over puffs and sprinkle with cinnamon. Serve hot.
