HOPPING JOHN

AKA Hoppin’ John, a relative of Limpin’ Susan. From 1940’s Key West cookbook.

1 pound black eye beans
1 C rice
1 large onion
2 small red peppers
1/4 pound fat pork
2 C water
salt and pepper

Cook in heavy, tightly covered pot. Boil black eye beans until tender. Drain well. Fry fat pork which has been cut into small pieces. Fry chopped onion adding red peppers. Wash rice thoroughly. Add 2 cups of cold water and salt to taste. Add cooked beans to uncooked rice. Boil 8 minutes, stirring once. Keep pot covered. Stir in grease from pork with onions and peppers. Turn off heat and cover pot. Let it stand 35 minutes before removing cover. Stir before serving.
