1 can chickpeas, drained
1/4 C olive oil
1/4 C lemon juice
6 cloves garlic, crushed
1 t salt
2 T finely chopped scallions
2 T finely chopped cilantro
1 T mint (garnish)
Mix all ingredients (except mint) in a serving bowl and refrigerate for 1 hour. Sprinkle with mint before serving.
