Indian Coconut Fudge

1/2 C honey
1/2 C peanut butter
1/2 C finely chopped dates
2/3 C powdered milk (not reconstituted)
1/2 T rose water or orange extract
1-1/2 C coconut

Combine honey, peanut butter, dates, and powdered milk and knead it together with your hands. Wash and dry your hands, then form the dough into a long log. Cut the log in half.

Toss the coconut with the rose water or orange extract. Spread it on a silicone mat or a large piece of waxed paper and roll the pieces of the log to cover them in coconut. Slice into pieces with a sharp knife.
