I never think to eat kielbasa cold, but since it’s fully cooked when you buy it, you certainly can. This would go well on a bed of leafy greens, or you could serve it as a small-plate appetizer for a party.
1 clove garlic, peeled
Pinch salt
Fresh ground pepper
2 T dijon mustard
4-5 T red wine vinegar
3 green onions, diced
3 T olive oil
2 lbs kielbasa
1/2 C fresh parsley
In a wooden salad bowl, crush the garlic, salt, and pepper together with a spoon or fork. Stir in the mustard, vinegar, onion, and olive oil. Peel the kielbasa and dice it into 1-inch pieces. Stir together with the dressing and parsley. Allow flavors to combine for a half hour before serving.
