1 T cooking oil
1 lb spinach or other fresh greens (chard, radish greens, kale, or mustard greens all work), washed and dried with a towel (I like to chop the stems and include them, but others prefer to just use the leaves.)
1 T vinegar
1 T soy sauce
2 t sesame oil
Optional: 1-2 cloves garlic, finely minced
Sesame seeds
Heat the cooking oil over high heat in a large wok or skillet. Add the spinach or greens until they are nicely wilted. If you are using the garlic, mix it in just before you remove the greens from the pan. In a medium-sized serving bowl, combine the vinegar, soy sauce, and sesame oil. Spoon the cooked spinach into this sauce and mix it well. Sprinkle sesame seeds on top. Makes 2 servings, and can be served warm or cold.
