Lemon protein bars

1 C whole wheat flour
2 t oat bran
1-1/2 C rolled oats
1/2 C TVP
2 T soy protein powder
1/3 C unsalted sunflower seeds
1/8 t salt
1 C dried fruit pieces, such as cranberries and diced apricots
2 eggs
Juice and zest of one lemon
1/2 C maple syrup
1/2 C vegetable oil

Preheat oven to 325 F. Line a 9-inch square baking pan with foil, then grease the foil.

Mix together flour, oat bran, oats, soy powder, sunflower seeds, salt and fruit. In another bowl, beat the egg, then stir in lemon juice and zest, maple syrup, and canola oil. Fold the liquid mixture into the dry ingredients and mix lightly. Press into the foiled pan. Bake for 30 minutes, until slightly browned. Let cool, remove from pan and cut into bars or squares.
