I had a bottle of lime oil that hung around my kitchen for a couple of years, and I was always looking for things to do with it. I wish I’d had this recipe then!
1-1/2 C flour
1/2 C cornstarch
1 C butter, room temperature
1/2 C powdered sugar
2 T fresh lime juice
1 t finely grated lime peel
1/2 t lime oil
Combine flour and cornstarch in a medium bowl. In a large bowl, beat butter and powdered sugar until fluffy. Mix in lime juice, lime peel, and lime oil. Beat in the flour mixture. Refrigerate about 45 minutes, until firm. Form dough into balls and place on greased baking sheet, about an inch apart.
Bake at 350 F for just over 20 minutes, until golden on top and browned on bottom. Remove from oven and sprinkle with powdered sugar. Let cool completely on baking sheets.
