Limpin’ Susan is a Southern relative of Hoppin’ John.
3 slices of bacon, chopped
2 C okra, sliced
1 C rice
1 C water
Fry bacon and okra in a skillet. When the okra is tender, add the rice and water. Cover and simmer for 18 minutes (no peeking) until the rice is tender.
TIP: Do you have trouble cooking rice? The trick is to put the lid on and let it simmer for the full 18 minutes without lifing the lid. The problem is, once you cover it, you can’t tell whether it’s still simmering, or about to boil over! There are two ways to avoid this problem. One is to get a saucepan with a glass lid, so you can watch the rice without lifting the lid. The other is to listen v-e-r-y carefully to the pan. Your ear will tell you if it’s simmering gently, or if it’s boiling like mad, or if the heat’s too low and nothing’s happening.
