4 C flaked coconut
1 C sugar
3/4 C flour
2 t vanilla
3 egg whites

Combine all ingredients, stir well. Spoon evenly into 20 greased muffin cups, pressing into bottom and up sides. Bake at 400 F for 13-15 minutes or until edges are browned. Cool in pans on wire racks 2 minutes. Loosen with sharp knife, remove and let cool completely on wire racks. Fill with custard, pudding, ice cream, or fresh fruit.
