Meat Loaf

I just realized that although I have done serious journalistic research into the subject of meatloaf, I did not have a single meatloaf recipe on the Foodie Gazette. I will rectify that oversight with the following recipe, found in my brother Stevie’s collection. I believe from the handwriting that the recipe came from his ex-wife, but there do not seem to be any murderous ingredients in it.

1 egg, beaten
1/3 C milk
1 t salt
1/8 t pepper
1-1/2 C bread crumbs
1/3 C chopped onion
1/3 C shredded raw carrot
3/4 C shredded cheddar cheese
1 lb ground beef

Topping:
1/4 C brown sugar
1/4 C ketchup
1 T mustard

Mix all ingredients. Bake at 350 F for 1-1/4 hours. Combine brown sugar, ketchup, and mustard and spread over loaf for last 15 minutes.
