These cookies are soft, a little like tiny brownies. My brother Hank loves them!
Cookies:
1 C cocoa
2 C powdered sugar
2 C flour
2 t baking powder
1/2 t salt
1/2 C oil
4 eggs
2 t vanilla
Combine cocoa, sugar, flour, baking powder, and salt. Beat in eggs, oil, and vanilla. Chill dough in refrigerator.
Preheat oven to 350 F. Form the cookies into small balls and place on greased cookie sheet. Bake for 5 minutes. Take them out, use a glass to press them flat, and bake for another 5 minutes. Frost while warm.
Frosting:
1 C powdered sugar
A drop or two of peppermint extract
1 T Creme de Menthe (you can omit this and just use a few more drops of peppermint extract)
Mix the powdered sugar with the creme de menthe and peppermint. Add water, a teaspoon at a time, until it’s a spreadable consistency. Spread the frosting on the warm cookies. Optional: Sprinkle with colored sprinkles or crushed peppermint candies.
