Miso-Ginger Consomme

2-inch piece of fresh ginger
6 C water
1/2 C white miso
4 C sliced mushrooms
Optional: Fresh spinach or other greens, diced tofu
2 sliced green onions
1/2-1 t tamari

Finely grate the ginger into a paper towel or bit of cheesecloth. Squeeze it to yield 1-2 t ginger juice.

In a saucepan, whisk the water and miso together and bring to a light simmer. Add the mushrooms, green onions, and the greens or tofu, if desired. Stir in the ginger juice and tamari and cook for half a minute. Remove from heat and garnish with additional green onions.

Makes 6 60-calorie servings.
