No-Knead Yeast Bread

This is a pretty old recipe, from a 1981 cookbook.
2 C warm water
1 T yeast
2 t salt
1 T sugar
4 C white flour
Dissolve salt and sugar in the water and add the yeast. Let it bubble for about 5 minutes, then stir in the flour. Let it rise until doubled in size, then stir it down and put it in 2 well-greased small loaf pans. Sprinkle the top with salt and let it rise again until double in size.
Bake at 375 F for 45-60 minutes. Let cool in the pan for 10 minutes.
This one can be varied by adding any of a number of flavorings to the yeast-and-water mixture, before you stir in the flour. See Variations on Quick Yeast Bread for ideas.
