This is a simple coffee cake, not too sweet, easily made from things already on hand.
1-1/2 C flour
3/4 C oats
2 t baking powder
1/2 C sugar
1/2 t salt
1 C milk
1/4 C oil
1 t vanilla
1/2 C raisins (can substitute any dried fruit)
Mix dry ingredients in a large bowl. Mix wet ingredients in a medium bowl. Combine wet ingredients with dry and pour into a cast-iron skillet or a cake pan. Bake for about 25 minutes at 350.
Remove and sprinkle with a topping of brown sugar, softened butter, oats, and cinnamon. Bake for 10 more minutes, until a toothpick inserted in the center comes out clean.
