If you don’t have fresh basil, use a spoonful of pesto and then cut back on the amount of garlic.
1 C olive oil
1 T balsamic vinegar
1 T fresh basil, minced
1 T fresh parsley, minced
1 T dried oregano
1 or 2 fresh garlic cloves, minced, crushed, or grated
1/2 t salt
1 t coarse black pepper
Dash of red pepper flakes or pepper sauce
Combine all ingredients and let sit for an hour or two. Serve in a shallow bowl with crusty bread.
