Oven-Fried Chicken with Almonds

1 C whole wheat bread crumbs
1/4 C grated Parmesan cheese
1/4 C finely chopped almonds
2 T chopped parsley
1 clove garlic, crushed
1 t salt
1/4 t thyme
Pinch of black pepper
1/4 C olive oil
2 lbs boneless, skinless chicken breasts, pounded to 1/2-inch thickness and then cut into about 12 pieces

Preheat oven to 400 F. Combine crumbs, cheese, nuts, parsley, and spices in a medium bowl. Mix well. Put the oil in a shallow dish. Dip the chicken first in the oil, then in the crumb mixture. Place in a shallow baking pan.

Bake for 25 minutes, or until chicken is cooked through. Do not turn chicken during cooking.
