From my parents’ good friend, B.J. King (the B.J. stands for Billie Jean, but she’s not that Billy Jean!)
8 chicken breast halves
1 t salt
Simmer 1 hour or until tender. Remove – cool meat – cut up meat coarsely – set aside.
In a lightly greased casserole, place 2 10-oz pkgs steamed, drained broccoli spears.
1/2 C mayonnaise
1 10-1/2 oz can creamed chicken soup, undiluted
1/2 C commercial sour cream
3 T dry sherry
1 t paprika
1 t prepared mustard
1/2 t curry powder
Spoon 1/2 of this sauce over the broccoli in the casserole. Arrange chicken over the sauce and top with remaining sauce.
Cover and refrigerate overnight. Remove from refrig. Let stand 1/2 hour and bake at 350 for 30 minutes. Remove from oven and sprinkle with:
1/3 C Parmesan cheese
1 T Paprika
Bake 5 minutes longer.
Serve with rice – serves 8.
