I made these as a bon voyage present for Dick and Larry on Ula G when they headed south in 2010. I hope they’ll remember their boatyard-bound friend Meps, the one waving sadly from her boat on jackstands as they sail away.
1/4 C butter, softened
1/4 C shortening
1/2 C peanut butter
1 egg
1 t vanilla
1 C sugar
1-1/4 C flour
1 t baking soda
1 t salt
As many chocolate chips as you like (I used about 1/2 C)
Preheat oven to 350 F.
Cream peanut butter, shortening, and butter together and mix in egg, vanilla, and sugar. Combine flour, baking soda, and salt and mix it in with the rest of the ingredients. You may have to use your hands — this ends up being like a dough. Add as many chocolate chips as you like and mix them in.
Form the cookies into flattened balls, about 1-1/2 inches in diameter, and bake on a greased cookie sheet for about 12-15 minutes.
