Pear and almond tart

This is an alternative to an upside-down cake…it’s a “rightside-up” cake.

3/4 C butter, softened
1/2 C sugar
3 eggs
1 C ground almonds
1/4 C flour
4 medium pears, perfectly ripe

To prepare the pears, peel them and remove the stems. Cut each pear in half from the top down. Using a grapefruit spoon or small knife, carefully remove the core.

Beat the butter and sugar together until fluffy. Beat in each of the eggs. Then mix in the almonds and flour. Pour batter into a tart pan. Place the 8 pear halves evenly around the top.

Bake for 40-45 minutes at 350 F, until browned on top. Serve with whipped cream or vanilla ice cream.
