1-lb boneless center-cut pork loin, cut into 1-1/2 inch cubes
1 C water
1/4 C cider vinegar
2 T soy sauce
3 cloves garlic, minced
1 small bay leaf
1/4 t salt
Combine all ingredients in a medium saucepan. Allow to sit for a half hour.
Bring to a boil, then lower heat and simmer, covered, for about an hour.
Makes 4 servings, 200 calories each.
