Pickled onions

1 huge or 2 medium red or sweet onions, sliced very thinly
Boiling water
1/4 C cider vinegar
3/4 C water
2 T honey
1 t salt
1 t whole peppercorns
1/4 t ground cloves
1/2 t ground ginger

This is beautiful when you make it with a red onion, but sweet onions taste just as good.

Put the onions in a bowl and pour boiling water over them to cover. Let soak for 5 minutes, then drain well.

While the onions drain, combine the remaining ingredients in a large jar with a tight lid and shake to combine. Put the drained onions in the marinade and shake gently. Refrigerate for at least two hours before serving.
