Pork and tequila tacos

Serves 4

2-1/2 lbs ground pork
7 cloves of garlic, minced
1 t sage
1-1/2 t fennel
1/4 t powdered cayenne
1/4-1/2 t red pepper flakes
1-1/2 t salt
2/3 C tequila

Combine all the ingredients in a large bowl and mix well with your hands. This can be done a couple of days in advance and refrigerated. Then crumble it into a large frying pan and cook for about 10 minutes over high heat, stirring every once in a while, until it’s browned.

Serve in tortillas with lettuce, cheese, diced tomatoes, and the salsa of your choice.
