I haven’t used my pressure cooker for a couple of years. This recipe makes me glad we have been reunited!
- 2 lbs flank steak, cut into thin strips
- 1 T coconut oil
- 6 cloves garlic, divided
- 1/4 – 1/3 C soy sauce
- 1/2 C water
- 1/2 – 2/3 C brown sugar
- 2 t minced or grated fresh ginger
- 2 T cornstarch
- 1/4 C cold water
- Handful of green onions, diced
- Sesame seeds, for garnish
Season the steak with salt and pepper. Heat the oil in a pressure cooker and brown the beef. Remove it to a plate.
Mince the garlic and put about half of it in the pressure cooker with the soy sauce, 1/2 C water, brown sugar, and ginger. Bring to a boil and then add the beef. Seal the pressure cooker and cook for 12 minutes.
Release the pressure and open the cooker. Combine the cornstarch and cold water and mix it into the pot along with the remaining garlic, stirring over medium heat until thickened.
Serve over white rice with green onions and sesame seeds on top. This goes well with steamed broccoli.
