Quick curried chicken salad

2 T mayonnaise
1/3 C yogurt
1/2 t Madras curry powder
1 apple
1 T olive oil
1 lb chicken breast, cut in bite-sized pieces
2 cloves garlic, chopped
handful raisins
handful walnuts
Salad greens

Blend the mayo, yogurt, and curry powder in a medium-sized bowl. Stir in the apple.

In a skillet, saute the chicken in the oil until it’s cooked through. Add the garlic and saute for a minute. Then remove from heat and stir in the sauce-apple mixture, the raisins, and the walnuts. Serve warm or cold over greens.
