4 slices of bacon, cut into small pieces
1 med onion, chopped
2 C water, divided
2 T achiote seeds (try Asian markets)
2 C rice, uncooked
1 t salt
1/2 frozen peas
Saute bacon and onion for 5 min, drain off fat and set aside. Add 1/2 C water to achiote seeds, to color the water, let sit 10-15 minutes. Strain seeds from water and pour the red water into saucepan, discard seeds. Add remaining water, rice, salt, bacon, and onion. Bring to a boil, cover, and turn heat to a simmer; cook 20-25 min. When rice is almost cooked, stir in peas.
