Salatat Taheena (Tahini salad)

5 tomatoes, finely diced
1 cucumber, peeled and diced
1/2 C finely chopped parsley
3 T tahini
1/4 C lemon juice
4 cloves garlic, crushed
1 T dried mint
Mix tomatoes, cucumber, and parsley, set aside. In a small bowl, mix the tahini with the lemon juice. Mash the garlic with the salt and add it to the tahini-lemon mixture. Toss this mixture with the vegetables and garnish with dried mint.
