Barry’s family’s chili recipe, for years
2 lbs. hamburg
1 large onion, chopped
1 can (40 oz) red kidney beans, undrained
1 t. ground thyme
2 3 T. chili powder
1/2 t. garlic powder
1 t. salt(sometimes I cut this back)
1/4 t. cayenne pepper
1 1/2 c. shredded Colby cheese (about 3/4 lb.)
2 eggs, slightly beaten
Brown meat and onions in large kettle, stirring frequently to break up any
large chunks (I remove excess grease if necessary). Add beans and seasonings.
When this comes to a soft boil, add cheese and stir till it melts. Add eggs
and stir in _quickly_ (this makes chili thick as a brick). Cook on low to
medium heat about l hour (covered kettle).
Barry’s Notes: Used 3T chili powder (which was fresh), 1/2 t cayenne, and results were just a little bite to it. (As written, almost none)
