Simple cinnamon streusel coffee cake

Cake
1-1/2 C flour
1/2 t salt
2 t baking powder
3/4 C white granulated sugar
1/4 C butter, softened
1/2 C milk
1 egg

Streusel Topping
1/2 C brown sugar
2 T flour
2 t cinnamon
2 T butter, melted

Preheat oven to 350 F. In a small bowl, mix the flour, salt, and baking powder. In a larger bowl, cream together the softened butter and the white sugar. Blend in the milk and egg, then the dry ingredients, mixing gently until just blended.

Grease an 8×8 baking pan and spread the batter evenly into it.

Combine the streusel topping ingredients and sprinkle them over the cake batter. Use a fork to swirl the topping into the dough. Don’t stir it all the way in, just make some patterns through the top inch or so, leaving most of the streusel on top.

Bake for 25-30 minutes, until a cake tester comes out clean.

Optional: Add chopped pecans, walnuts, or almonds to the streusel topping.
