Simple Gorgonzola-Stuffed Dates

1 lb dates
4 oz cream cheese, softened
2 oz Gorgonzola or blue cheese

Blend the cream cheese with the Gorgonzola. Make a lengthwise cut along each date and remove the pit with your fingers. Using a small teaspoon or pastry bag, fill each date with a spoonful of the cheese filling.
