10-oz pkg soba noodles
10-oz package frozen peas
1/3 C diced scallions
1/4 C olive oil
2 T lemon juice
2 t soy sauce or tamari
1 t sugar
3/4 t salt
3/4 t black pepper
6 oz crumbled feta cheese
Cook noodles and peas together in boiling salted water for about 5 minutes, until noodles are done. Meanwhile, whisk all other ingredients except feta together. Drain noodles and peas in a colander, rinse under cold water, and drain again. Toss with dressing and feta and sprinkle with additional black pepper.
