Nice party finger food, from Sharon
1 10 oz. pkg. frozen chopped spinach
1 cup herb seasoned bread stuffing, crushed to crumbs (about 3 oz.)
(I go by weight since the 1 cup seemed too little one time)
1/2 cup grated Parmesan cheese
3 eggs, slightly beaten
3/4 stick softened butter
Salt and pepper to taste
Cook spinach according to package directions and drain very well. Combine all
ingredients with spinach and mix well. Roll into walnut sized balls. Place on
ungreased cookie sheet and bake 10 minutes at 350. Serve on toothpicks. Makes
about 25. These may be made ahead unbaked and frozen for up to 3 months.
Bring to room temperature and then bake.
